This delicious Breakfast Sweet Potato recipe combines the sweetness of baked sweet potatoes with savory  turkey bacon, eggs, and cheese for a flavorful morning meal.

Sweet Potatoes:

  • 3 large sweet potatoes, for baking

turkey Bacon Filling:

  • ½ cup turkey bacon, cooked and crumbled
  • 2 tablespoons unsalted butter
  • ¼ cup shredded white cheddar cheese

Egg Topping:

  • 6 large eggs
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • scallion, minced (for topping)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F.
  2. Prepare sweet potatoes: Prick the sweet potatoes with a fork, coat with canola oil and salt, then bake for 60-90 minutes until fork-tender.
  3. Prepare filling: Slice potatoes in half, scoop out the centers, mix with turkey  bacon, butter, and cheese.
  4. Fill the potatoes: Stuff the potato skins with the filling.
  5. Add eggs: Make a well in each potato, add raw egg, salt, and pepper.
  6. Bake: Bake for 15-20 minutes until eggs are set and potatoes are warmed through. Top with scallions.
