  • Ground cinnamon: 1 teaspoon

  • Salt: ½ teaspoon

Wet Ingredients:

  • Apples: 1 ½ cups, peeled and diced (about 2 medium apples)
  • Greek yogurt: 1 cup (240g)
  • Brown sugar: ¾ cup (150g), packed
  • Eggs: 2 large
  • Vanilla extract: 1 teaspoon

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
  3. Combine wet ingredients: In another bowl, combine the Greek yogurt, brown sugar, eggs, and vanilla extract, whisking until smooth.
  4. Combine wet and dry: Pour the wet mixture into the dry ingredients and gently fold them together, then fold in the diced apples.
  5. Fill muffin tin: Scoop the batter into a muffin tin, filling each cup about ¾ full.
