Ground Beef Mixture:
- 1 pound lean ground beef
- 1 medium onion, finely diced
- 2–3 cloves garlic, minced
- 1 packet taco seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn kernels, drained
- 1 (10 oz) can diced tomatoes with green chilies
Cream Mixture:
- 1 (10.5 oz) can condensed cream of mushroom soup
- 1 cup sour cream
Additional:
- 2 cups shredded Mexican cheese blend, divided
- 1 large bag (9.25 oz) Nacho Cheese Doritos, lightly crushed
- Optional garnishes: sliced green onions, diced avocado, fresh cilantro, diced tomatoes
- Preheat oven and prepare baking dish: Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Cook ground beef: Brown ground beef with onion and garlic, then drain excess fat.
