Main Soup:

  • 1 lb Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (15 oz) can of white beans, drained and rinsed
  • 1 cup heavy cream
  • 2 cups spinach, chopped

Cheese Mixture:

  • 1 1/2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated

Additional:

  • 8 oz lasagna noodles, broken into pieces
  • Salt and pepper to taste

Instructions

  1. Cook the Sausage: In a large pot, cook the sausage over medium heat until browned, breaking it apart with a spoon as it cooks. Remove the sausage from the pot and set aside.
  2. Sauté Onion and Garlic: In the same pot, sauté the onion and garlic until softened, about 3 minutes.
  3. Prepare Soup Base: Add the chicken broth and white beans to the pot. Bring to a boil, then reduce the heat to simmer.
  4. Add Cream and Cheese: Stir in the heavy cream, spinach, ricotta, mozzarella, and Parmesan cheeses. Let the soup simmer for about 5 minutes, stirring occasionally.
  5. Cook Lasagna Noodles: Add the broken lasagna noodles to the soup and cook until tender, about 10 minutes.
  6. Finish Soup: Return the sausage to the pot and cook for an additional 5 minutes. Season with salt and pepper to taste.
  7. Serve: Serve hot with extra Parmesan cheese on top.
