Watermelon Preparation

  • 1 watermelon
  • Watermelon balls (from the watermelon)

Sago

  • 1 cup sago
  • 3 cups water (for cooking sago)

Syrup and Milk

  • 160g sugar (adjust to taste)
  • 300g evaporated milk
  • 3 cups water (for sugar syrup)

Instructions

  1. Cook the Sago: Bring 3 cups of water to a boil in a pot. Add 1 cup of sago and cook for about 10 minutes, stirring occasionally to prevent sticking, until the sago pearls turn semi-translucent with a white dot at the center. Remove from heat and let the sago sit for another 10 minutes until fully translucent and clear.
  2. Rinse the Sago: Drain the cooked sago and rinse under cold running water using a strainer to stop the cooking process and remove excess starch. Set the sago aside.
  3. Prepare the Watermelon Balls: Cut the watermelon in half. Using a spoon or melon baller, carefully scoop out watermelon balls while removing any seeds you encounter. Set aside the balls for later use.
  4. Puree the Watermelon: Peel off the remaining watermelon rind and cut the flesh into smaller chunks. Place the chunks into a blender and puree until smooth, making sure to remove seeds during the process. Set the watermelon puree aside.
  5. Make the Sugar Syrup with Milk: In a clean pot, bring 3 cups of water and 160g of sugar to a boil. Stir continuously until the sugar dissolves completely. Remove from heat and stir in 300g of evaporated milk until well combined.
  6. Combine Ingredients: Add the watermelon puree, rinsed sago, and watermelon balls into the sugar-milk mixture. Stir gently to combine all the components evenly.
  7. Chill the Dessert: Transfer the mixture to a container and refrigerate for 3 to 4 hours, or until the dessert is well chilled and refreshing.
  8. Serve: Once chilled, serve the Watermelon Sago immediately as a cooling and sweet summer dessert.
