  • 27 dumpling wrappers (round or square)
  • 75 ml water

Sauce

  • 1 tablespoon tahini or peanut butter
  • ½ teaspoon sugar
  • 1 tablespoon light soy sauce
  • ½ lime, juiced
  • ½ tablespoon sesame oil
  • 1 garlic clove, minced

  • Chilli oil
  • 10 g chives, finely sliced
  • Sesame seeds

Instructions

  1. Prepare the meat filling: In a large bowl, combine the ground chicken, finely sliced spring onions, chopped shiitake mushrooms, minced garlic, and ginger. Add the light soy sauce, rice wine vinegar, sesame oil, sugar, ground black pepper, and MSG if using. Mix thoroughly until the mixture is well combined and silky in texture.
  2. Layer the dumpling lasagna: Take a heatproof dish approximately 7″x9″x3″ deep. Spread about one third of the meat filling evenly on the bottom. Cover this with 9 dumpling wrappers laid out with minimal overlap to resemble a lasagna sheet layer. Add another layer of the meat filling on top of the wrappers, followed by another layer of dumpling wrappers, then the remaining meat filling, and finally a last layer of dumpling wrappers.
  3. Add water for steaming: Gently pour 75 ml of water over the layered dumpling lasagna to introduce moisture essential for steaming.
  4. Steam the lasagna: Place the assembled dish into a steaming basket. Set the basket over a pan containing 2-3 inches of boiling water, ensuring it does not touch the water. Cover with a lid and steam on high heat for 17 minutes until the wrappers become wrinkly and dimples form, indicating they are cooked through.
  5. Make the sauce: While steaming, mix tahini (or peanut butter), sugar, light soy sauce, lime juice, sesame oil, and minced garlic in a small bowl until smooth and well combined.
