  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • Pinch of salt

For the Filling:

  • 4 (8-oz) packages cream cheese, room temperature
  • 1 1/4 cups granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon lemon zest
  • 4 large eggs, room temperature
  • 1/3 cup sour cream
  • 1/3 cup heavy cream

For the Strawberry Topping:

  • 2 cups fresh strawberries, hulled
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch dissolved in 1 tablespoon water

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 325°F (160°C) and wrap the outside of a 9-inch springform pan with aluminum foil to prevent water leakage.
  2. Make the crust: Combine graham cracker crumbs, melted butter, sugar, and salt. Press into the pan and bake.
  3. Make the filling: Beat cream cheese until smooth. Add sugar, vanilla, lemon zest, eggs, sour cream, and heavy cream. Pour over crust.
  4. Bake: Place the pan in a roasting pan with water and bake until set.
  5. Cool and refrigerate: Cool the cheesecake in the oven, then refrigerate for at least 6 hours.
  6. Make the topping: Blend strawberries, sugar, and lemon juice. Cook with cornstarch mixture until thickened. Cool and spread over chilled cheesecake.
  7. Garnish and serve: Garnish with fresh strawberry halves before serving.
