For the Dough
- 1 1/2 cups all purpose flour
- 1/2 cup cake flour
- 3 tablespoons sugar
- 1/4 teaspoon salt
- 1 1/2 sticks cold butter (12 tablespoons), cut into cubes
- 2 tablespoons shortening
- 1/4 cup ice water
For the Filling
- 4 cups fresh berries (a mixture of blueberries, raspberries, quartered strawberries, and blackberries)
- 3 tablespoons sugar
- 1 vanilla bean, seeds removed
- 1 tablespoon cornstarch
- juice of 1/2 a lemon
For Assembly
- 1 large egg
- 1 tablespoon milk
- coarse sugar for sprinkling
- vanilla bean ice cream for serving
- Make the dough: Combine the all-purpose flour, cake flour, sugar, and salt in a food processor. Pulse once to mix the dry ingredients evenly. Add the cold butter cubes and shortening, pulsing until the mixture resembles coarse meal. Gradually add the ice water while pulsing until a soft dough ball forms. Remove the dough, lightly toss it in flour, and shape it into a disc. Wrap with plastic wrap and refrigerate for 30 minutes to chill.
- Preheat the oven: Set your oven to 425℉ (220℃) to prepare for baking the galette.
- Prepare the filling: In a small bowl, sprinkle the sugar and add the vanilla bean seeds. Massage the seeds into the sugar until combined and fragrant. Add this vanilla-infused sugar to the fresh berries. Stir in the cornstarch and lemon juice, gently tossing until all the berries are evenly coated with the mixture.
- Roll out the dough: Lightly flour your countertop. Roll out the chilled dough into a roughly 14×17 inch circle. Trim about 1 inch off the edges and save it for another use if desired. Carefully transfer the rolled dough to a parchment-lined baking sheet.
- Assemble the galette: Pile the prepared berry filling in the center of the dough, leaving about a 1-2 inch border clear around the edges. Fold the edges of the dough up and over the berries, creating a rustic tart shape. Gently crimp the folded edges to secure the crust over the filling.
- Apply egg wash and sugar: Whisk together the egg and milk to create an egg wash. Brush this mixture evenly over the exposed crust edges. Sprinkle coarse sugar on top of the dough edges to add texture and sweetness.
- Bake the galette: Bake in the preheated oven for approximately 25 minutes or until the edges are golden brown and crispy. The berry filling should be bubbly and slightly thickened.
- Cool and serve: Allow the galette to cool for a few minutes on the baking sheet. Serve warm topped with a scoop of vanilla bean ice cream for an extra indulgent dessert experience.
Notes
- Ensure butter and shortening are very cold to achieve a flaky crust.
- You can substitute the fresh berries with seasonal fruits or frozen berries that have been thawed and drained.
- The reserved trimmed dough can be used for small cookies or pie crust decorations.
- For a dairy-free version, substitute shortening with a plant-based fat and use a plant-based milk alternative for the egg wash or omit the egg wash entirely.
- This galette is best served slightly warm with ice cream or whipped cream.
