  • ½ cup butter, melted
  • ¼ teaspoon vanilla extract
  • 1 cup buttermilk
  • Orange food coloring (optional)

Honey Butter

  • 4 tablespoons butter, melted
  • 2 tablespoons light brown sugar, packed
  • 2 tablespoons honey
  • Pinch of salt
  • Pinch of cinnamon

Instructions

  1. Prepare Sweet Potato Puree: Cook and puree sweet potatoes.
  2. Preheat Oven: Preheat oven to 400°F and butter an 8-inch baking dish.
  3. Mix Dry Ingredients: Combine cornmeal, flour, baking powder, salt, baking soda, spices, and sugars in a bowl.
  4. Prepare Wet Ingredients: Mix sweet potatoes, eggs, butter, oil, vanilla, and buttermilk (add food coloring if desired).
