Ingredients

Scale

Peanut Butter Oatmeal Bars

  • 1/2 cup unsalted butter (softened to room temperature)
  • 1/4 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/3 cup creamy peanut butter
  • 1 cup whole wheat flour (can also substitute all-purpose flour; if so, add 1/4 tsp salt and 1/2 tsp baking soda)
  • 1 cup old-fashioned or quick oats

Peanut Butter Streusel

  • 1/4 cup whole wheat flour
  • 1/4 cup packed brown sugar
  • 2 tbsp creamy peanut butter (softened to room temperature)
  • 1 1/2 tbsp unsalted butter

Peanut Butter Drizzle

  • 1/3 cup powdered sugar
  • 1/4 cup creamy peanut butter
  • 13 tbsp milk (add 1 tbsp at a time, additional milk may be added until drizzle consistency is reached)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or spray it with non-stick cooking spray to ensure easy removal of bars.
  2. Cream Butter and Sugars: In a large mixing bowl, use a hand mixer or stand mixer to cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 2-3 minutes.
  3. Add Wet Ingredients: Beat in the large egg, creamy peanut butter, and vanilla extract until the mixture is smooth and well combined.
  4. Incorporate Oats and Flour: Gently stir in the oats by hand until evenly distributed. Then, add the flour (and salt and baking soda if using all-purpose flour) and mix just until combined to avoid overmixing and keep the bars tender.
  5. Spread Batter: Evenly spread the prepared batter into the lined or greased baking pan, smoothing the top with a spatula.
  6. Make Streusel: In a separate bowl, combine the whole wheat flour, brown sugar, creamy peanut butter, and softened butter for the streusel topping. Mix until it forms coarse crumbs but is not too wet.
  7. Top with Streusel: Sprinkle the peanut butter streusel evenly over the batter in the baking pan to ensure an even crunchy topping.
  8. Bake: Place the pan in the preheated oven and bake for 25-28 minutes, or until the bars are lightly golden and a toothpick inserted in the center comes out mostly clean.
  9. Cool Before Drizzle: Remove from oven and let the bars cool completely for 15-30 minutes to set before adding the drizzle.
  10. Prepare Drizzle: While bars are baking, mix powdered sugar, creamy peanut butter, and 1 tbsp milk in a small bowl. Add additional milk 1 tbsp at a time until the drizzle reaches a smooth consistency. Chill the drizzle in the refrigerator until ready to use.
  11. Apply Drizzle: For a neat drizzle, transfer the peanut butter drizzle into a piping bag or Ziploc bag with a small corner snipped off, then drizzle over the cooled bars evenly.
  12. Final Set and Serve: Allow the drizzle to set for about 10 minutes. Cut into desired sized bars and serve. Enjoy your crunchy, chewy peanut butter oatmeal bars!
  13. Storage: Store any leftover bars in an airtight container at room temperature for up to 5 days to maintain freshness.

Notes

  • You can substitute all-purpose flour for the whole wheat flour by adding 1/4 tsp salt and 1/2 tsp baking soda to the batter for best results.
  • Use creamy peanut butter for a smoother texture in the bars, streusel, and drizzle.
  • Adding milk gradually in the drizzle helps achieve the perfect pouring consistency without being too runny.
  • Quick oats can be used instead of old-fashioned oats, but the texture will be slightly different (softer).
  • Letting the bars cool completely before adding the drizzle prevents it from melting and running too much.
  • You can store leftover bars in an airtight container at room temperature; they are best consumed within 5 days.
