  • 1½ teaspoon paprika
  • 1½ teaspoon onion powder
  • 1½ teaspoon salt
  • 1½ teaspoon dried thyme
  • 1½ teaspoon dried basil
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried mustard
  • 1 teaspoon cayenne pepper
  • 1 tablespoon baking powder

For Frying:

  • 4 cups vegetable oil

Instructions

  1. Season the Chicken: Place chicken in a bowl, season with salt, pepper, garlic powder, dried mustard, and paprika. Mix well.
  2. Marinate: Pour buttermilk over chicken, stir to combine, and marinate in the refrigerator for at least 1 hour or overnight.
  3. Prepare Coating: Whisk together flour, baking powder, salt, garlic powder, paprika, dried basil, dried thyme, onion powder, and cayenne pepper in a dish.
  4. Heat Oil: Heat vegetable oil to 340°F in a fryer or large pot.
  5. Coat Chicken: Dredge each chicken piece in the flour mixture until well coated.
  6. Fry Chicken: Carefully fry chicken pieces in hot oil, turning as needed, until golden brown and cooked through (about 15 minutes per piece).
  7. Drain and Serve: Let the fried chicken drain on a wire rack to maintain crispiness.
