Sausage Egg Breakfast Roll-Ups are a quick and easy morning treat perfect for busy weekdays or weekend brunch. These savory roll-ups combine scrambled eggs, cheddar cheese, and fully cooked breakfast sausage wrapped in flaky crescent roll dough and baked to golden perfection.

Ingredients

Scale

Proteins & Dairy

  • 6 breakfast sausage links (fully cooked)
  • 4 large eggs
  • 1 tablespoon milk
  • 1 cup shredded cheddar cheese
  • 1 tablespoon butter

Dough

  • 1 can (8 oz) refrigerated crescent roll dough

Seasonings

  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature while you prepare the roll-ups.
  2. Prepare Egg Mixture: In a medium bowl, whisk together the eggs, milk, salt, and pepper until fully combined to create a smooth egg mixture.
  3. Scramble Eggs: Heat the butter in a skillet over medium heat, then pour in the egg mixture. Stir gently and cook until the eggs are just set but still moist. Remove from heat.
  4. Prepare Crescent Dough: Unroll the refrigerated crescent roll dough and separate it into individual triangles along the perforations.
  5. Assemble Roll-Ups: Place a spoonful of the scrambled eggs onto the wide end of each dough triangle. Sprinkle cheese over the eggs, then place one sausage link on top.
  6. Roll Dough: Starting from the wide end, carefully roll up each dough triangle encasing the fillings, sealing the edges as you go.
  7. Bake: Arrange the assembled roll-ups on a baking sheet lined with parchment paper. Bake in the preheated oven for 15 to 20 minutes, or until the crescent rolls are golden brown and puffed.
  8. Serve: Remove from the oven and let cool slightly. Serve warm and enjoy your delicious sausage egg breakfast roll-ups!

Notes

  • You can substitute cheddar cheese with your favorite cheese like mozzarella or pepper jack for a different flavor profile.
  • Fully cooked sausage links save time and ensure safety, but you can cook raw sausage before assembling if preferred.
  • For a lower-fat version, use egg whites or reduced-fat cheese and butter.
  • These roll-ups can be assembled in advance and refrigerated; bake just before serving.
  • Adding chopped veggies like bell peppers or spinach to the eggs can boost nutritional value and flavor.
