Ingredients

Scale

Soup Base

  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 1 link chorizo sausage or other spicy sausage, sliced

Vegetables and Beans

  • 1 14-ounce can fire roasted tomatoes (with juices)
  • 8 cups vegetable stock
  • 1 large bunch Swiss chard, chopped
  • 2 14-ounce cans white beans, drained

Instructions

  1. Prepare Swiss Chard: Wash each Swiss chard leaf thoroughly, rinsing both front and back to remove any dirt or sand. Chop the Swiss chard and set it aside.
  2. Sauté Onions and Sausage: In a large pot, heat the olive oil over medium heat. Add the sliced onions and sausage, cooking for 7 to 8 minutes until the onions become translucent and the sausage is browned.
  3. Add Tomatoes: Pour in the fire roasted tomatoes along with their juices. Continue to sauté the mixture over medium heat for 5 minutes to meld flavors.
  4. Combine and Simmer: Add the vegetable stock, chopped Swiss chard, and drained white beans to the pot. Bring the soup to a boil, then reduce the heat to a simmer. Cook until the Swiss chard is tender, about 10-15 minutes.
  5. Serve and Store: Serve the soup hot. Store any leftovers in an airtight container in the refrigerator for up to 4 days.

Notes

  • For a spicier kick, consider using hot chorizo sausage or adding a pinch of red pepper flakes.
  • This soup freezes well; freeze in portions and thaw before reheating.
  • Substitute vegetable stock with chicken stock for a richer flavor if not vegetarian.
  • To reduce sodium, use low-sodium vegetable stock and rinse the canned beans before adding.
  • For a creamier texture, blend a portion of the soup before combining it back.
