This Street Corn Pasta Salad is a delightful fusion of Mexican street corn flavors combined with pasta for a satisfying and flavorful salad dish.

Pasta:

  • 1 pound pasta

Salad:

  • 2 cups cooked corn kernels
  • 1 red bell pepper, diced
  • ½ red onion, finely chopped
  • 1 jalapeno pepper, seeded and minced

Dressing:

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup freshly chopped cilantro
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil the pasta in salted water following the package instructions. Rinse cooked pasta under cold water and set aside.
  2. Prepare the Dressing: Whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a small bowl.
  3. Combine Ingredients: In a large mixing bowl, mix pasta, corn kernels, red bell pepper, red onion, and jalapeno pepper. Pour dressing over and toss gently to coat.
  4. Add Cilantro and Seasoning: Sprinkle cilantro over the salad, adjust seasoning with salt and pepper. Refrigerate for at least 30 minutes.

Notes

  • For a spicier kick, leave some seeds in the jalapeno.
