Delicious and healthy strawberry cookies that are gluten-free and vegan, using simple ingredients and easy to make.

  • 2 cups rolled oats, gluten-free if needed

  • 2 large bananas, mashed

  • 1/4 cup strawberries, chopped
  • 1/2 cup almond butter (can substitute any nut or seed butter)
  • 1/4 cup chocolate chips, optional

Instructions

  1. Preheat the oven: Preheat the oven to 180C/350F. Line a large tray with parchment paper or a Silpat cookie sheet. Set aside.
  2. Mix ingredients: In a large mixing bowl, combine all ingredients except strawberries and chocolate chips. Fold in strawberries and chocolate chips at the end.
  3. Shape cookies: Form 12 small balls of dough and place them on the lined sheet. Flatten each ball into a cookie shape.
  4. Bake: Bake for 12 minutes or until golden on the edges. Remove from the oven and let them cool on the tray completely.
