Ingredients

Scale

Cake

  • 1 box white cake mix (plus ingredients on the back: water, oil, egg whites)
  • 1 box lime Jello (3 ounce size)
  • 2 cups water

Topping

  • 8 ounces Cool Whip
  • 1 box white chocolate instant pudding mix (3 ounce size)
  • 1/3 cup St. Patrick’s Day sprinkles

Instructions

  1. Prepare the Cake Batter: Follow the package directions for the white cake mix, using the specified amounts of water, oil, and egg whites to make the batter.
  2. Bake the Cake: Pour the batter into a 13×9 inch baking pan and bake according to the package instructions. Once baked, transfer the cake to a wire rack and allow it to cool completely to room temperature.
  3. Poke Holes in the Cake: Using the handle of a wooden spoon or a similar tool, poke holes all over the surface of the cooled cake, spaced evenly to ensure the Jello will soak through.
  4. Make the Lime Jello Mixture: Bring 1 cup of water to a boil in a medium saucepan. Remove from heat and whisk in the lime Jello powder until dissolved. Add 1 cup of cold water and stir until fully combined.
  5. Pour Jello into the Cake Holes: Carefully pour the prepared lime Jello mixture evenly into the holes poked in the cake. Transfer the cake to the refrigerator and chill overnight to set.
  6. Prepare the Topping: In a large bowl, whisk together the Cool Whip and white chocolate instant pudding mix until smooth and thoroughly combined.
  7. Spread the Whipped Topping: Using a spatula or knife, evenly spread the whipped topping mixture over the entire surface of the chilled cake.
  8. Add Sprinkles: Decorate the top of the cake by sprinkling 1/3 cup of St. Patrick’s Day sprinkles over the whipped topping for a festive finish.

Notes

  • Ensure the cake is completely cooled before poking holes to avoid breaking.
  • Chilling the cake overnight allows the Jello to fully soak into the cake, enhancing flavor and moisture.
  • For extra flavor, consider using freshly whipped cream instead of Cool Whip if preferred.
  • Use a 13×9 inch pan to ensure proper baking and Jello absorption.
  • Store leftover cake in the refrigerator and consume within 3-4 days for best freshness.
