Main Meatloaf:

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 cup breadcrumbs
  • 1 large egg
  • 1/2 cup milk
  • 1 Tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste

Cream Cheese Filling:

  • 3/4 cup cream cheese, softened
  • 1/2 cup diced jalapenos (seeds removed for milder flavor)
  • 1/2 cup shredded cheddar cheese
  • 1 Tablespoon olive oil

Ranch Drizzle:

  • 1/2 cup sour cream
  • 2 Tablespoons ranch dressing mix

Instructions

  1. Preheat Oven: Preheat the oven to 350 F (180 C) and grease a loaf pan with cooking spray.
  2. Prepare Meat Mixture: In a large bowl, mix together ground beef, ground pork, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.
  3. Layer Meatloaf: Spread half of the meat mixture in the loaf pan, create a well in the center, and fill with the cream cheese, jalapeno, and cheddar mixture. Cover with the remaining meat mixture, sealing the edges.
  4. Bake: Bake in the preheated oven for 45-50 minutes until cooked through.
  5. Prepare Ranch Drizzle: In a bowl, whisk together sour cream and ranch dressing mix until smooth.
  6. Drizzle and Serve: Once the meatloaf is cooked, drizzle the ranch mixture over the top. Let it rest before slicing and serving.
