For the Meat Sauce:
- Olive oil for cooking
- 1 medium white onion, finely diced
- 2 garlic cloves, finely diced
- 500g ground beef (12% fat)
- 1 tablespoon tomato puree
- 80ml red wine
- 500g tomato passata
- 240ml beef stock
- ½ tablespoon Worcestershire sauce
- ½ bunch fresh basil, chopped
- ½ teaspoon dried oregano
- ½ teaspoon sugar
- 20g freshly grated parmesan
For the Pasta:
For the Garlic Bread Bowls:
- 6 crusty white rolls
- 100g butter, melted
- 30g parmesan for butter
- 1 tablespoon fresh parsley, finely chopped
- 3 garlic cloves, made into paste
- 200g mozzarella, shredded
- Cook Onion and Garlic: Heat olive oil in a large pan over medium heat. Add the finely diced onion and cook until golden brown, then add the diced garlic and cook for another minute until fragrant.
- Brown the Beef: Add ground beef to the pan and cook until browned thoroughly, breaking up any lumps, then stir in the tomato puree and mix well.
- Add Wine and Simmer: Pour in the red wine and let it reduce slightly for about 3-5 minutes. Then add the tomato passata, beef stock, Worcestershire sauce, chopped basil, oregano, and sugar. Stir well and simmer the sauce gently for 25 minutes until thick and flavorful. Stir in the freshly grated parmesan at the end.
- Prepare the Bread Bowls: Cut the tops off the crusty rolls and carefully hollow out the centers, leaving enough bread to maintain the bowl structure. Mix melted butter with garlic paste, chopped parsley, and parmesan. Brush this mixture generously inside and outside of the rolls.
- Cook the Spaghetti: Boil the spaghetti in salted water until al dente according to package instructions. Drain and immediately transfer the hot spaghetti directly into the meat sauce. Toss well to coat all pasta strands evenly with sauce.
- Assemble the Bread Bowls: Fill each hollowed bread roll generously with the spaghetti and meat sauce mixture, making sure sauce covers the top. Sprinkle shredded mozzarella evenly over the filled rolls.
- Bake to Finish: Preheat the oven to 350°F (175°C). Place the filled bread bowls on a baking tray and bake for 8-10 minutes until the bread is crisp and the mozzarella cheese has melted. For an extra golden top, optionally broil for 1-2 minutes, watching carefully to avoid burning.
Notes
- Use firm crusty rolls that sound hollow when tapped to ensure they hold the filling well without becoming soggy.
- Save the hollowed-out bread centers to make breadcrumbs for other recipes.
- The meat sauce can be prepared a day in advance and reheated before assembling the bread bowls for convenience.
