Ingredients

Scale

For the Cookies

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg, plus more for topping
  • 1/2 tsp ground cinnamon
  • 3/4 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed light-brown sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/2 tsp rum extract
  • 1/2 cup eggnog

For the Frosting

  • 1/2 cup unsalted butter
  • 3 to 5 Tbsp eggnog
  • 1/2 tsp rum extract
  • 3 cups powdered sugar

Instructions

  1. Preheat Oven and Prepare Dry Ingredients: Preheat your oven to 350°F (180°C). In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, nutmeg, and cinnamon for about 30 seconds. Set this dry mixture aside.
  2. Cream Butter and Sugars: Using an electric stand mixer fitted with the paddle attachment, whip the unsalted butter with granulated sugar and light brown sugar until the mixture turns pale and fluffy, which usually takes several minutes.
  3. Add Egg Yolks and Flavors: Add the egg yolks one at a time to the butter-sugar mixture, blending just until combined after each addition. Then stir in vanilla extract, rum extract, and eggnog for a rich and festive flavor.
  4. Combine Dry and Wet Ingredients: With the mixer set to low speed, slowly add the dry flour mixture into the wet ingredients and mix just until combined to avoid overworking the dough.
  5. Shape and Bake Cookies: Scoop the cookie dough by heaping tablespoonfuls and drop them onto Silpat or parchment paper-lined baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 11 to 13 minutes. Once baked, let the cookies rest on the baking sheet for several minutes before transferring them to a wire rack to cool completely.
  6. Prepare Eggnog Frosting: In a clean mixing bowl with the paddle attachment, whip the unsalted butter until it becomes very pale and fluffy. Add rum extract and 3 tablespoons of eggnog, then gradually mix in the powdered sugar. Add additional eggnog as needed to achieve your desired frosting consistency.
  7. Frost and Garnish Cookies: Once the cookies have completely cooled, spread the creamy eggnog frosting on top and sprinkle lightly with ground nutmeg for a festive finishing touch.

Notes

  • For best results, use room temperature butter and egg yolks to ensure smooth mixing.
  • Adjust the amount of eggnog in the frosting to achieve your preferred frosting thickness.
  • Cookies can be stored in an airtight container at room temperature for up to 3 days.
  • If desired, you can substitute rum extract with vanilla extract for a milder flavor.
  • Make sure cookies are fully cooled before frosting to prevent melting.
