Ingredients

Scale

Meat & Dairy

  • 1 pound mild Italian sausage
  • ½ cup cream cheese
  • 1 cup heavy cream
  • ¼ cup Parmesan cheese, grated

Vegetables & Aromatics

  • ½ small white onion, diced
  • 3 cloves garlic, minced

Pantry Items & Liquids

  • 1 tablespoon extra virgin olive oil
  • 1 can (6 ounces) tomato paste
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 cup chicken broth

Instructions

  1. Sauté Onions: In a large pan over medium heat, add extra virgin olive oil and diced onions. Cook until the onions are slightly soft and translucent, about 3-4 minutes.
  2. Add Garlic: Add minced garlic to the pan and cook for an additional 1 minute until fragrant, stirring constantly to avoid burning.
  3. Cook Sausage: Add the mild Italian sausage meat to the pan. Use a spatula to break it up and cook until browned and no longer pink, stirring frequently to ensure even cooking.
  4. Add Tomatoes and Seasoning: Stir in tomato paste, diced tomatoes, Italian seasoning, kosher salt, and black pepper. Mix well to combine all ingredients evenly.
  5. Incorporate Cream Cheese and Broth: Add cream cheese and chicken broth to the sausage mixture. Stir thoroughly until the cream cheese has melted and incorporated smoothly into the soup base.
  6. Add Heavy Cream and Parmesan: Pour in the heavy cream and sprinkle Parmesan cheese into the soup. Stir gently to blend all flavors.
  7. Simmer: Cover the pan with a lid and reduce heat to low. Let the soup simmer for 5 minutes, allowing the flavors to meld together and the soup to thicken slightly.
  8. Serve and Garnish: Ladle the soup into bowls and garnish with fresh chopped parsley and extra Parmesan cheese if desired. Serve hot.

Notes

  • For a spicier soup, substitute mild Italian sausage with hot Italian sausage.
  • You can use vegetable broth as a substitute for chicken broth to make this soup meatless.
  • Use low-fat cream cheese and heavy cream to reduce calories if desired.
  • This soup pairs well with crusty bread or a fresh green salad.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
