Dough:

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (60g) almond flour
  • ½ cup (60g) shelled pistachios, finely ground
  • ½ cup (120g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (120g) ricotta cheese
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • ½ tsp baking powder
  • ¼ tsp salt

For Finishing:

  • ¼ cup (60ml) honey (for drizzling)
  • Additional chopped pistachios (optional)

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Prepare the Dough: In a large bowl, cream butter and sugar until light and fluffy. Add ricotta, egg, vanilla extract, and almond extract. Mix until smooth. Gradually add flour, almond flour, ground pistachios, baking powder, and salt. Mix until a soft dough forms.
  3. Shape and Bake: Roll 1 tablespoon-sized portions of dough into balls. Place on the baking sheet, leaving space between them. Bake for 12-15 minutes, until edges are lightly golden. Let cool on the baking sheet for 5 minutes.
  4. Finish: While warm, drizzle honey over each bite. Sprinkle with extra chopped pistachios (if using). Transfer to a cooling rack and let cool completely. Enjoy at room temperature!
