Crust
- 20–25 Oreo cookies
- 6 tablespoons butter, melted
Chocolate Pudding Layer
- 1 package chocolate pudding mix
- 1 cup milk (use 1/2 cup for pudding, 2 tablespoons reserved for raspberry layer)
- 1/2 cup Cool Whip
Raspberry Layer
- 8 ounces cream cheese, softened
- 1/2 cup sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1/2 cup raspberries, fresh or frozen
- 1 cup Cool Whip
Final Topping
- Remaining Cool Whip (about 1/2 cup) for topping and decoration
- Prepare the crust: Crush 20-25 Oreo cookies into fine crumbs and mix thoroughly with 6 tablespoons of melted butter. Press this mixture evenly into the bottom of an 8×8 inch Pyrex dish to form the crust. Place in the freezer for 10 minutes to set.
- Make the chocolate pudding layer: Prepare 1 package of chocolate pudding mix using only 1/2 cup of milk (instead of the full cup). Once set, fold in 1/2 cup of Cool Whip gently to create a light, creamy texture. Spread this chocolate pudding layer evenly over the chilled Oreo crust. Return to the freezer for 10-15 minutes to firm up.
- Create the raspberry layer: In a bowl, beat 8 ounces of softened cream cheese with 1/2 cup sugar, 2 tablespoons milk, and 1 teaspoon vanilla extract until smooth and creamy. Carefully fold in 1/2 cup raspberries and 1 cup Cool Whip until combined. Spread this raspberry mixture evenly over the chilled chocolate pudding layer.
- Assemble and decorate: Top the raspberry layer with the remaining Cool Whip (approximately 1/2 cup), spreading it smoothly or decorating as desired. You can add extra raspberries or chocolate shavings for garnish.
- Chill before serving: Refrigerate the entire dessert for at least 4 hours to allow layers to set and flavors to meld. Serve chilled and enjoy!
Notes
- Using frozen raspberries is fine; just thaw them and drain any excess juice before using to avoid sogginess.
- For a lower-fat version, substitute light cream cheese and reduced-fat Cool Whip.
- Allow ample chilling time to ensure layers hold when slicing the dessert.
- Additional garnishes such as chocolate shavings, whole raspberries, or crushed Oreos can be added for presentation.
