A decadent and refreshing Raspberry Chocolate Lasagna Dessert featuring a crunchy Oreo cookie crust, layered rich chocolate pudding, and a creamy raspberry topping, perfect for impressing guests or enjoying a special treat.

Ingredients

Scale

Crust

  • 2025 Oreo cookies
  • 6 tablespoons butter, melted

Chocolate Pudding Layer

  • 1 package chocolate pudding mix
  • 1 cup milk (use 1/2 cup for pudding, 2 tablespoons reserved for raspberry layer)
  • 1/2 cup Cool Whip

Raspberry Layer

  • 8 ounces cream cheese, softened
  • 1/2 cup sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberries, fresh or frozen
  • 1 cup Cool Whip

Final Topping

  • Remaining Cool Whip (about 1/2 cup) for topping and decoration

Instructions

  1. Prepare the crust: Crush 20-25 Oreo cookies into fine crumbs and mix thoroughly with 6 tablespoons of melted butter. Press this mixture evenly into the bottom of an 8×8 inch Pyrex dish to form the crust. Place in the freezer for 10 minutes to set.
  2. Make the chocolate pudding layer: Prepare 1 package of chocolate pudding mix using only 1/2 cup of milk (instead of the full cup). Once set, fold in 1/2 cup of Cool Whip gently to create a light, creamy texture. Spread this chocolate pudding layer evenly over the chilled Oreo crust. Return to the freezer for 10-15 minutes to firm up.
  3. Create the raspberry layer: In a bowl, beat 8 ounces of softened cream cheese with 1/2 cup sugar, 2 tablespoons milk, and 1 teaspoon vanilla extract until smooth and creamy. Carefully fold in 1/2 cup raspberries and 1 cup Cool Whip until combined. Spread this raspberry mixture evenly over the chilled chocolate pudding layer.
  4. Assemble and decorate: Top the raspberry layer with the remaining Cool Whip (approximately 1/2 cup), spreading it smoothly or decorating as desired. You can add extra raspberries or chocolate shavings for garnish.
  5. Chill before serving: Refrigerate the entire dessert for at least 4 hours to allow layers to set and flavors to meld. Serve chilled and enjoy!

Notes

  • Using frozen raspberries is fine; just thaw them and drain any excess juice before using to avoid sogginess.
  • For a lower-fat version, substitute light cream cheese and reduced-fat Cool Whip.
  • Allow ample chilling time to ensure layers hold when slicing the dessert.
  • Additional garnishes such as chocolate shavings, whole raspberries, or crushed Oreos can be added for presentation.
