This Chicken and Green Bean Stir-Fry is a quick, healthy, and flavorful dinner option combining tender chicken strips with crisp green beans in a savory soy-honey sauce, perfect served over rice or noodles for a complete meal.

Ingredients

Scale

Protein

  • 1 pound boneless skinless chicken breasts, sliced into thin strips

Vegetables

  • 2 cups fresh green beans, trimmed
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Sauces and Oils

  • 2 tablespoons vegetable oil, divided
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)

Seasonings

  • Salt and pepper to taste

To Serve

  • Cooked rice or noodles

Instructions

  1. Cook the chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken breasts, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
  2. Stir-fry the green beans: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the trimmed green beans and stir-fry for 3-4 minutes until they are bright green and tender-crisp.
  3. Add garlic and ginger: Add the minced garlic and ginger to the skillet with the green beans, cooking for an additional 1 minute until fragrant.
  4. Combine chicken and sauce: Return the cooked chicken to the skillet. In a small bowl, whisk together soy sauce, honey, sesame oil, and red pepper flakes if using. Pour this sauce over the chicken and green beans and stir to combine.
  5. Finish cooking: Cook everything together for another 2-3 minutes until heated through and the sauce is slightly thickened.
  6. Serve: Serve the stir-fry hot over cooked rice or noodles for a complete and satisfying meal.

Notes

  • You can substitute chicken breasts with chicken thighs if preferred for a juicier texture.
  • For a spicier dish, increase the amount of red pepper flakes or add fresh sliced chili peppers.
  • Use low-sodium soy sauce to reduce salt content.
  • To make it gluten-free, use tamari instead of regular soy sauce.
  • Add other vegetables like bell peppers or snap peas for more color and nutrients.
  • Make sure not to overcook the green beans to retain their crispness and vibrant color.
