  • 1/2 onion, roughly chopped
  • 3 poblano peppers (about 1 pound)
  • 2 tablespoons butter
  • 1/4 cup flour
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 2 cloves garlic, peeled
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • Salt and pepper, to taste

Instructions

  1. Preheat Oven: Preheat the oven to 375 degrees Fahrenheit.
  2. Prepare Poblano Peppers: Slice the poblano peppers in half lengthwise, remove the insides, and place them on a baking sheet with onions. Toss with oil, salt, and pepper. Roast for 30 minutes.
