Instructions

  1. Prepare the mix: Break the cookies into small pieces and roughly chop some peeled, unsalted pistachios. Combine them in a mixing bowl and set aside.
  2. Melt chocolate: Finely chop the white chocolate and melt it gently in a double boiler with the coconut oil. Remove from heat as soon as it starts to melt to avoid burning. If your pistachio butter is unsweetened, stir in the powdered sugar, then incorporate the pistachio butter until the mixture is smooth.
  3. Combine ingredients: Pour the melted chocolate and pistachio butter mixture over the cookie and pistachio pieces. Stir thoroughly to coat all dry ingredients evenly with the creamy chocolate mixture.
  4. Shape the salami: Lay two layers of plastic wrap on your work surface. Spoon the mixed ingredients onto the wrap and shape them into a firm log shape. For a smoother, more uniform shape, roll the log inside a sushi mat, secure with a rubber band, and wrap again tightly with plastic wrap.
