  • ¼ cup minced red onion
  • 4 tbsp lime juice (about 2 limes or use bottled lime juice)
  • ¼ tsp black pepper
  • ⅛ tsp salt
  • 1 tbsp diced jalapenos (optional)

Instructions

  1. Prepare the Pineapple Bowl: Cut about one-third off the pineapple from the top, leaving the stem attached to the larger piece. Make a vertical cut around the edge of the pineapple flesh and crosswise cuts inside to create chunks. Use a metal spoon to carefully loosen and scoop out the pineapple chunks, leaving a hollowed-out pineapple shell as the serving bowl. Pour out any excess juice from the bowl.
  2. Dice Pineapple Chunks: From the scooped-out pineapple, dice enough to make one cup of diced pineapple for the salsa. Save any remaining pineapple for another use.
  3. Mix the Salsa Ingredients: In a small mixing bowl, combine the diced pineapple, diced Roma tomatoes, diced bell peppers, minced red onion, chopped cilantro, lime juice, salt, and black pepper. If desired, add diced jalapenos for a spicy kick. Stir gently until all ingredients are evenly mixed.
