Ingredients

Scale

For the Bites

  • 1 cup plain Greek yogurt (nonfat or full-fat)
  • 1/4 cup creamy peanut butter (or almond butter for variation)
  • 2 tablespoons honey (or maple syrup for vegan option)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (plus extra for topping, optional)

For Coating

  • 1 cup dark chocolate chips (or semi-sweet chocolate chips)
  • 1 teaspoon coconut oil (optional, for smoother melting)

Optional Toppings

  • Crushed peanuts
  • Sea salt flakes
  • Shredded coconut

Instructions

  1. Prepare the Yogurt Mixture: In a mixing bowl, stir together the Greek yogurt, creamy peanut butter, honey, and vanilla extract until the mixture is smooth and fully blended. Gently fold in the mini chocolate chips, reserving a few for topping if desired.
  2. Shape and Freeze Bites: Line a baking sheet with parchment paper. Using a small cookie scoop or spoon, portion the mixture into tablespoon-sized balls. Place them on the baking sheet and gently flatten each into a disc shape. Freeze for 1 to 2 hours until firm.
  3. Melt Chocolate Coating: In a microwave-safe bowl, melt the dark chocolate chips with coconut oil (if using) in 30-second intervals, stirring well after each until smooth. Alternatively, melt using a double boiler on the stovetop.
  4. Dip and Decorate: Remove the frozen yogurt discs from the freezer. Using a fork or dipping tool, dip each disc into the melted chocolate, tapping off excess chocolate. Return them to the parchment-lined baking sheet. While the chocolate is still wet, sprinkle with chosen toppings such as crushed peanuts, sea salt flakes, or shredded coconut.
  5. Freeze to Set: Place the coated bites back into the freezer and freeze for 15 to 20 minutes until the chocolate coating is fully set and firm.
  6. Store and Serve: Transfer the frozen bites to an airtight container and keep them stored in the freezer. Before serving, let them sit at room temperature for 2 to 3 minutes to soften slightly, ensuring a creamy, delicious texture.

Notes

  • Use nonfat Greek yogurt for a lower calorie treat or full-fat for extra creaminess.
  • Maple syrup can replace honey for a vegan-friendly option.
  • Coconut oil helps achieve a smoother and shinier chocolate coating but is optional.
  • Substitute almond butter for peanut butter to change the flavor profile.
  • Store bites in an airtight container in the freezer for up to 2 weeks.
  • Allow bites to thaw slightly before eating for best texture.
