A simple and comforting Italian pastina recipe that is quick to make and delicious to eat. Perfect for a cozy meal or as a side dish.

Ingredients

Scale

Pastina:

  • ¾ cup (4oz / 120g) pastina – I’ve used stelline pastina

Vegetable Broth:

  • 3 cups vegetable broth – I’ve used low sodium

Parmesan Cheese Mixture:

  • 4 tablespoons freshly grated parmesan cheese (ensure it’s finely grated)
  • Drizzle of extra virgin olive oil
  • Salt and black pepper to taste

Garnish (optional):

  • Extra grated parmesan cheese
  • Black pepper

Instructions

  1. Prepare the Broth: In a small pot, pour in the vegetable broth and season with a pinch of salt and pepper. Cook over medium-high heat with the lid on and bring to a boil.
  2. Cook the Pastina: Once boiling, add the pastina and stir through the broth. Continue stirring occasionally to prevent clumping. Cook until al dente, typically 5-8 minutes.
  3. Finish the Dish: Turn off the heat and add the grated parmesan cheese and drizzle of olive oil. Stir continuously for 1-2 minutes to thicken the broth and create a creamy consistency.
  4. Serve: Portion into bowls and garnish with extra olive oil, parmesan cheese, and black pepper. Enjoy!
