Ingredients

Scale

Sausage and Base

  • 1 lb Italian sausage (sweet or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock

Pasta and Cheese

  • 1 cup ditalini pasta
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese

Seasonings and Garnish

  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and freshly cracked black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the Sausage: Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through. Remove the sausage from the pot and set aside, leaving the drippings in the pot for added flavor.
  2. Sauté Aromatics: Add the diced onion and minced garlic to the pot with the sausage drippings. Sauté for 3-4 minutes until the onion is soft and aromatic.
  3. Add Liquids and Herbs: Stir in the drained diced tomatoes, chicken stock, dried basil, and dried oregano. Return the browned sausage to the pot. Bring the soup to a gentle simmer and let it cook for 10 minutes to meld the flavors.
  4. Cook the Pasta: Add the ditalini pasta to the simmering pot. Cook for 8-10 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
  5. Finish with Cream and Cheese: Reduce heat to low and stir in the heavy cream and freshly grated Parmesan cheese. Stir continuously until the cheese melts completely and the soup attains a creamy texture.
  6. Season and Serve: Taste the soup and adjust salt and freshly cracked black pepper as needed. Garnish with freshly chopped parsley and serve hot for a comforting meal.

Notes

  • Use freshly grated Parmesan cheese for the best melting and flavor results; pre-grated cheese may not melt smoothly.
  • For a lighter version, substitute turkey sausage for Italian sausage and use half-and-half instead of heavy cream.
  • To avoid soggy pasta when making ahead, cook the pasta separately and add it just before serving.
  • Leftovers improve in flavor after a day; add a splash of chicken stock when reheating to loosen the soup.
  • Toasting ditalini pasta in the pot before boiling adds a subtle nutty flavor and enhances the overall taste.
