For the Chicken:
- 1 1/2 lb chicken breast (about 3–4 pieces), approx. 1 inch thick
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1/3 cup grated parmesan
- 1/3 cup breadcrumbs, Italian or plain (can add 1 tsp Italian seasoning to plain breadcrumbs)
- 1/2 tsp cracked pepper
- 1/2 – 3/4 tsp sea salt
For the Potatoes:
- 2 lb red potatoes, cut into bite sized pieces (small potatoes quartered, larger cut into 6ths or 8ths)
- 1 – 2 garlic cloves, minced
- 2 tbsp olive oil
- 2 tbsp grated parmesan
- Salt and pepper to taste
For the Green Beans:
- 1 lb fresh green beans, ends trimmed
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 tbsp parmesan (optional)
- Salt and pepper to taste
- Preheat and prepare potatoes: Preheat oven to 425°F. Line a sheet pan with parchment paper or spray with cooking oil. In a medium bowl, toss together potatoes, minced garlic, olive oil, parmesan, salt, and pepper until evenly coated. Spread the potatoes on one third of the sheet pan and bake for 10-15 minutes, allowing them to brown nicely if you prefer.
- Prepare and add chicken: While the potatoes cook, in the same bowl, combine chicken breasts with olive oil, minced garlic, grated parmesan, breadcrumbs, cracked pepper, and sea salt. Toss well to evenly coat the chicken. Remove the sheet pan from the oven, add the coated chicken pieces next to the potatoes.
- Toss and add green beans: While the chicken and potatoes start baking, toss the green beans with olive oil, minced garlic, parmesan (optional), salt, and pepper. Add the green beans to the remaining space on the sheet pan alongside the chicken and potatoes.
- Bake to finish: Return the sheet pan to the oven and bake for about 25 minutes or until the chicken reaches an internal temperature of 165°F. For extra crispy potatoes, switch the oven to broil on high for an additional 4-5 minutes if desired.
- Rest and serve: Remove the pan from the oven and allow all components to rest and cool for a few minutes before serving. Enjoy your delicious one-pan Parmesan crusted chicken dinner!
Notes
- Use parchment paper for easier cleanup and to prevent sticking.
- Adjust seasoning according to your taste preference.
- If you want more crispiness, broiling the potatoes after baking is recommended.
- Ensure chicken is cooked thoroughly to an internal temperature of 165°F for safety.
- You can substitute green beans with other vegetables like asparagus or broccoli.
