Ingredients

Scale

Casserole

  • 1 lb loaf Sourdough or French Bread, cut into chunks
  • 8 large eggs
  • 2 cups (480ml) milk (whole or 2%)
  • 1/2 cup (120ml) heavy whipping cream
  • 1/2 cup (104g) sugar
  • 1/4 cup (36g) light brown sugar, unpacked
  • 2 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 67 medium-sized bananas, chopped

Streusel Topping

  • 3/4 cup (98g) all-purpose flour
  • 3/4 cup (169g) firmly packed brown sugar
  • 1 tsp cinnamon
  • 1/2 cup (112g) salted butter, cut into pieces

Instructions

  1. Prepare the Dish: Grease a 9×13 inch casserole dish thoroughly to prevent sticking and set aside.
  2. Combine Bread: Place the bread chunks into a large bowl and set aside.
  3. Make Egg Mixture: In another large bowl, whisk together the eggs, milk, heavy cream, sugars, vanilla extract, and ground cinnamon until fully combined and smooth.
  4. Mix Ingredients: Pour the egg mixture over the bread chunks, add the chopped bananas, and gently stir to evenly combine the ingredients without breaking the bread pieces.
  5. Assemble Casserole: Transfer the bread and egg mixture into the prepared casserole dish and spread it evenly. Cover with plastic wrap or foil and refrigerate overnight to allow the bread to soak up the custard.
  6. Preheat Oven: When ready to bake, preheat the oven to 350°F (176°C).
  7. Bake Casserole: Bake the casserole uncovered for about 35-40 minutes or until it is set and golden on top.
  8. Prepare Streusel: While the casserole is baking, combine the flour, brown sugar, and cinnamon in a bowl. Add the salted butter pieces and use a fork or pastry cutter to mash and blend until the mixture becomes crumbly.
  9. Add Streusel Topping: When the casserole is nearly done, remove it from the oven and evenly crumble the streusel mixture over the top.
  10. Finish Baking: Return the casserole to the oven and bake for an additional 5 minutes or until the streusel is melted and golden brown on top.
  11. Serve: Serve the casserole warm, ideally with maple syrup or your favorite syrup for drizzling.

Notes

  • For best results, use day-old or slightly stale bread for better absorption of the egg custard.
  • You can substitute heavy cream with half-and-half to reduce fat content slightly.
  • Adjust the amount of cinnamon and sugar according to your taste preferences.
  • This casserole can be assembled up to 24 hours in advance and kept refrigerated before baking.
  • Speckle the bananas in the casserole with lemon juice to prevent browning if preparing far in advance.
  • To keep the casserole gluten-free, use gluten-free bread and flour substitutes for the streusel topping.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
