Instructions

  1. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
  2. Combine Wet Ingredients: In another bowl, whisk the milk, large egg, melted butter, and vanilla extract (if using) until the mixture is smooth and homogenous.
  3. Make the Batter: Pour the wet ingredients into the dry ingredients. Gently stir the mixture just until combined, leaving a few lumps intact to avoid overmixing which can make pancakes tough.
  4. Cook Pancakes: Heat a nonstick skillet or griddle over medium heat. Lightly grease the surface with butter. Pour about 1/4 cup of batter for each pancake onto the skillet.
