  • 1 ½ pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Vegetables & Aromatics:

  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 yellow onion, peeled and diced
  • 2 teaspoons minced garlic (about 2 cloves)
  • 4 carrots, peeled and cut into bite-sized chunks
  • 4 celery ribs, trimmed and sliced
  • 1 ½ pounds red potatoes, scrubbed and cut into bite-sized chunks

Broth & Herbs:

  • 4 cups chicken broth
  • 1 teaspoon ground sage
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 4 whole bay leaves

Thickening & Garnish:

  • ¼ cup cold water
  • 2 tablespoons cornstarch
  • 2 teaspoons chopped fresh parsley (for garnish)

Instructions

  1. Season and Cook the Chicken: Season the chicken breasts with salt and black pepper. In a large pot, heat 1 tablespoon of butter and olive oil. Cook the chicken until browned and cooked through. Shred the chicken into bite-sized pieces and set aside.
  2. Cook the Vegetables: In the same pot, melt butter and sauté onion and garlic. Add carrots, celery, and potatoes. Cook until tender.
  3. Simmer the Stew: Pour in broth, add herbs. Simmer until vegetables are tender.
  4. Thicken the Broth: Mix cold water and cornstarch, then add to the pot. Simmer until thickened.
  5. Finish the Stew: Add shredded chicken, heat through. Remove bay leaves.
  6. Serve: Ladle into bowls, garnish with parsley, and serve warm.
