For the Nashville Hot Mayo:
- 1/2 cup mayonnaise
- 1/2 lemon, juiced
- 3 tablespoons McCormick® Grill Mates® Nashville Hot Chicken Seasoning, divided
For the Chicken Cheesesteaks:
- 1 tablespoon oil
- 1 1/2 pounds boneless skinless chicken thighs, cut into bite-size chunks
- 1 medium green bell pepper, chopped
- 1 medium yellow onion, chopped
- 4 slices pepper Jack cheese
- 2 (8- to 10-inch) hoagie rolls, toasted
- Dill pickle slices
- Prepare the Nashville Hot Mayo: In a small bowl, mix mayo, lemon juice, and 1 tablespoon of the Nashville Hot Chicken Seasoning. Cover and set aside.
- Cook the Chicken: Toss chicken with oil and remaining 2 tablespoons Nashville Hot Chicken Seasoning. Cook on a hot flat top grill until done.
- Sauté Peppers and Onions: On the grill, cook peppers and onions until softened. Combine with cooked chicken and cheese.
- Assemble the Cheesesteaks: Divide the chicken mixture into hoagie rolls. Top with pickle slices and Nashville hot mayo.
