  • 1 lb chicken breast, boneless and skinless
  • 1 tbsp olive oil
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt

For the Pasta:

  • 8 oz spaghetti
  • 1 tbsp butter
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook the Spaghetti: Boil the spaghetti as per package instructions. Drain and set aside.
  2. Cook the Chicken: Season chicken with smoked paprika, black pepper, and salt. Cook in a skillet until done. Slice and set aside.
  3. Prepare the Sauce: In the same skillet, sauté onions and garlic. Add chicken broth, cream, and simmer. Add cheeses and stir until smooth.
  4. Combine: Toss cooked spaghetti in the sauce. Top with chicken, parsley, and red pepper flakes.
