Instructions

  1. Make the Crust: Preheat your oven to 350°F (175°C). Crush the chocolate sandwich cookies in a food processor until fine crumbs form. Add the melted butter and pulse until the mixture resembles wet sand. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish, using the bottom of a glass or measuring cup to compact it tightly. Bake for 8-10 minutes, then let it cool completely.
  2. Prepare the Fudge Layer: In a heatproof bowl, melt the chocolate chips and heavy cream together over a double boiler or in the microwave in 20-second increments, stirring until smooth.   4. Whipped Cream Topping: Whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form. Spoon or pipe the whipped cream over the chocolate mousse layer. For a decorative finish, use a piping bag fitted with a star tip.
