Potato Mixture:

  • 2 tablespoons avocado oil
  • 1 pound potatoes, cut into 1/2 inch cubes

Beef Mixture:

  • 1 pound lean ground beef
  • 1/2 cup diced yellow onion
  • 1 red bell pepper, diced
  • Kosher salt and freshly ground black pepper to taste (approximately 1 – 1 1/2 teaspoons kosher salt)
  • 4 ounces diced green chiles
  • 2 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded cheese

Instructions

  1. Heat the oil: Heat the oil in a large skillet over medium-high heat. Swirl to coat the bottom and reduce heat to medium.
  2. Cook potatoes: Add potatoes and cook for about 6 minutes until golden and tender.
  3. Add beef: Push potatoes aside, add ground beef, onion, and bell pepper. Season and cook until beef is browned.
  4. Season and cook: Add green chiles, spices, and cilantro. Cook until potatoes are tender and beef is cooked through.
  5. Adjust seasoning: Taste and adjust salt if needed. Top with cheese and cook until melted. Garnish with cilantro and serve hot.
