Ingredients

Llasagna Noodles:

9 pieces lasagna noodles, cooked according to package instructions.

Vegetable Mix:

2 tablespoons olive oil, 1 medium onion (chopped), 2 cloves garlic (minced), 1 medium zucchini (diced), 1 bell pepper (chopped), 1 cup spinach (chopped), 1 cup mushrooms (sliced), 1 teaspoon Italian seasoning, salt and pepper to taste.

Cheese Mixture:

2 cups ricotta cheese, 2 cups shredded mozzarella cheese, 1 cup grated Parmesan cheese.

Béchamel Sauce:

3 cups béchamel sauce (store-bought or homemade).

Garnish:

½ cup fresh basil (chopped, optional).

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C).
  2. Cook Noodles: Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. Sauté Vegetables: In a large pot, sauté onion and garlic in olive oil until translucent. Add zucchini, bell pepper, spinach, and mushrooms. Season with Italian seasoning, salt, and pepper. Cook until tender.
  4. Prepare Cheese Mixture: Combine ricotta cheese, 1 cup mozzarella, and ½ cup Parmesan cheese in a bowl.
  5. Layer Ingredients: In a baking dish, layer béchamel sauce, noodles, cheese mixture, sautéed veggies, and repeat. Top with remaining sauce and cheeses.
  6. Bake: Cover with foil, bake for 30 minutes, then uncover and bake for an additional 15 minutes until golden and bubbly.
