Pancakes:

  • 1 cup unsweetened almond milk
  • 7 oz plain Greek yogurt
  • 2 TBSP fresh lime juice
  • 1 + ¼ cups all-purpose flour
  • 5 graham crackers, crushed
  • 2 TBSP sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 TBSP coconut oil, melted and cooled slightly
  • 2 eggs
  • Zest of 1 lime

Whipped Topping:

  • ½ cup heavy whipping cream
  • ¼ cup powdered sugar
  • ⅛ tsp pure vanilla extract
  • Lime zest, to taste

Instructions

  1. In a medium-large bowl, whisk together almond milk, Greek yogurt, and lime juice. Allow mixture to sit and thicken.
  2. Crush graham crackers.
  3. In a separate bowl, combine flour, finely crushed graham crackers, sugar, baking powder, baking soda, and salt.
  4. Heat up your griddle.
  5. Whisk in melted coconut oil and eggs to the wet ingredients.
  6. Add lime zest.
  7. Sift flour into wet ingredients, stirring gently to combine until a thick, slightly lumpy batter forms.
  8. Ladle batter onto a hot, greased griddle using a 1/3 cup measuring cup.
  9. Cook until bubbles form on top, then flip and brown both sides.
  10. Whip heavy cream with vanilla extract until stiff peaks form; mix in lime zest.
  11. Dollop whipped cream on pancakes, sprinkle with graham cracker crumbs, and garnish with lime slice.

Notes

  • You can adjust the sweetness of the whipped topping by adding more or less powdered sugar to suit your taste.
