Karpatka is a traditional Polish cream pie made with layers of choux pastry and a rich custard cream filling. This decadent dessert is a showstopper at any gathering.

For the dough

  • 75 ml whole milk
  • 75 ml water
  • 75 g unsalted butter
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon vanilla extract
  • 100 g all-purpose flour, sifted
  • 170 g (about 3 large) eggs, at room temperature

For the cream

  • 600 ml whole milk
  • 160 g granulated sugar
  • ½ teaspoon salt
  • 50 g cornstarch, sifted
  • 1 teaspoon vanilla extract
  • 4 egg yolks (large eggs), at room temperature
  • 200 g unsalted butter, at room temperature
  • 15 g granulated sugar (for beating with the butter)
  • Powdered sugar for decoration

Instructions

  1. For the dough – Preheat the oven. Prepare pans. Make the dough by heating ingredients in a saucepan, mixing in flour, cooling, then adding eggs gradually. Split dough into pans and bake.

  • Ensure all ingredients are at room temperature for the best results.
  • Handle the choux pastry dough gently to preserve its airy texture.
  • Decorate with a dusting of powdered sugar for a finished look.
