This Jamie Oliver-inspired Apple Pie Cake combines the best of both worlds with a moist cake base topped with a layer of sweet, spiced apples and a buttery crumb topping.

Ingredients

Cake:

  • 1 box (425g) yellow cake mix
  • 1½ cups (360ml) water
  • ⅓ cup (80ml) vegetable oil
  • 3 large eggs

Apple Mixture:

  • 6 apples, peeled and sliced
  • 3 tbsp (45g) brown sugar
  • 1 tsp cinnamon
  • 1 tbsp (15ml) lemon juice

Topping:

  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) brown sugar
  • ¼ tsp salt
  • ½ cup (115g) cold butter, cubed

Instructions

  1. Preheat oven: Preheat oven to 350°F (180°C). Grease a 9×13 inch pan.
  2. Mix cake batter: Combine cake mix, water, oil, and eggs in a bowl. Pour into the prepared pan.
  3. Prepare apple layer: Toss sliced apples with brown sugar, cinnamon, and lemon juice. Spread over the cake batter.
  4. Make topping: Mix flour, brown sugar, and salt. Cut in cubed butter until crumbly. Sprinkle over the apple layer.
  5. Bake: Bake for 35–60 minutes or until a toothpick inserted comes out clean.
  6. Cool and serve: Allow the cake to cool completely before serving. Optionally, dust with powdered sugar.
