  • 2 large eggs (room temperature)
  • 1/4 cup vegetable oil (or canola or melted coconut oil)
  • 1/3 cup sour cream (or greek yogurt)
  • 1/4 cup white sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla essence
  • 1 1/2 cups finely grated zucchini
  • 1 cup semi-sweet chocolate chips (divided)

Instructions

  1. Step 1: Prepare the Oven and Loaf Pan – Preheat oven to 325°F (163°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Step 2: Combine Dry Ingredients – Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl.
  3. Step 3: Mix Wet Ingredients – In a large bowl, mix eggs, oil, sour cream, sugars, and vanilla extract until smooth.
  4. Step 4: Incorporate Dry Ingredients and Add Fillings – Gradually stir dry ingredients into wet mixture. Fold in zucchini and 3/4 cup chocolate chips.
  5. Step 5: Pour and Bake – Pour batter into pan, top with remaining chocolate chips. Bake for 55-65 minutes.
  6. Step 6: Cool and Serve – Cool in pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
