Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste

Garlic Butter Sauce:

  • 6 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning

Vegetables:

  • 2 medium zucchinis, sliced into half-moons
  • 1 cup fresh corn kernels (from about 2 ears of corn)
  • 1⁄4 cup fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Season the Chicken: Season both sides of the chicken breasts with salt and freshly ground black pepper.
  2. Cook the Chicken: In a large skillet over medium heat, cook the chicken breasts in olive oil for about 6-7 minutes on each side until golden brown and cooked through. Remove and set aside.
  3. Prepare the Garlic Butter Sauce: In the same skillet, melt 4 tablespoons of butter over medium-low heat. Add minced garlic, cook until fragrant. Stir in Italian seasoning.
  4. Cook the Vegetables: Add sliced zucchini to the skillet and cook for 4 minutes until softened. Add corn kernels and cook for another 2 minutes.
  5. Combine and Finish: Return chicken to the skillet, spoon garlic butter, zucchini, and corn over it. Add remaining butter, parsley, and lemon juice. Stir gently, heat through for 1-2 minutes.
  6. Adjust Seasoning and Serve: Taste and adjust seasoning as needed. Serve hot, garnished with parsley.
