  • ½ cup ketchup
  • ½ cup light soy sauce
  • ½ cup pineapple juice canned

  • 1 tablespoon garlic paste or minced garlic
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon cumin
  • ½ teaspoon coarse black pepper
  • ½ teaspoon paprika smoked or sweet

Additional Ingredients:

  • Pineapple rings – 1 pineapple or 1 can of slices drained
  • ½ cup sliced green onions for garnish

Instructions

  1. Rinse and Dry Chicken: Rinse chicken thighs and pat dry.
  2. Prepare Marinade: In a large bowl or ziploc bag, combine all marinade ingredients except chicken. Mix well.
  3. Marinate Chicken: Reserve ½ cup of marinade for later. Add chicken to the remaining marinade, ensuring it’s well coated. Marinate in the refrigerator for at least 4 hours or overnight.
  4. Prep Grill: Preheat grill to 400°F and lightly oil grates.
