Instructions

  1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery, cooking for about 5 minutes until the vegetables are softened and fragrant.
  2. Add Garlic: Stir in minced garlic and cook for an additional minute, being careful not to let it burn, until you can smell its aroma.
  3. Add Main Ingredients and Spices: Incorporate the rinsed lentils, diced potatoes, diced tomatoes with their juices, vegetable broth, ground cumin, smoked paprika, dried thyme, dried rosemary, salt, and black pepper into the pot. Stir to combine all ingredients evenly.
