Dumplings

  • 2 cups bisquick

  • ⅔ cup milk

Instructions

  1. Prepare Chicken Broth: In a large bowl, combine 8 cups of water with 4 tablespoons of Better Than Bouillon Chicken. Microwave for 3 minutes, then stir well and set aside.
  2. Sauté Vegetables: In a large stock pot over medium heat, add 4 tablespoons of salted butter, diced carrots, celery, and finely diced onions. Stir to combine and cook for 10 minutes, stirring frequently to prevent the onions from burning.
  3. Make Roux and Add Broth: Sprinkle ½ cup of flour into the pot with vegetables and stir to combine. Slowly add the prepared chicken broth, then bring the mixture to a boil.
  4. Add Chicken and Seasonings: Stir in the shredded chicken along with 1 teaspoon each of Italian seasonings, garlic powder, onion powder, and salt. Mix well, reduce heat to low, and let simmer while preparing the dumplings.
  5. Make Dumpling Batter: In a separate bowl, combine 2 cups bisquick with 1 teaspoon each of salt, garlic powder, and Italian seasonings. Drizzle ⅔ cup milk into the dry mix and gently stir until just combined into a thick, paste-like batter. Avoid overmixing. Let the batter rest for 1-2 minutes.
  6. Drop Dumplings into Soup: Using a 1 ½ tablespoon cookie scoop, gently drop spoonfuls of the dumpling batter into the simmering chicken and vegetable mixture, spacing them apart as they will expand.
  7. Cook Dumplings Covered: Cover the pot with a lid and simmer on low heat for 15 minutes.
