Pancake Batter
- 1 cup (120g) Bisquick or Pancake Mix
- 1 scoop (31g) Vanilla PEScience Select Protein Powder
- 3/4 cup (180g) Skim Milk (or your choice of milk)
- 1 tsp Maple Extract (optional)

- Prepare the pancake batter: Mix the pancake mix and protein powder together in a bowl. Add the milk and maple extract, then stir until there are no dry ingredients left and the batter is smooth.
- Cook the pancakes: Heat a large skillet or griddle over medium heat and lightly coat with cooking spray. Pour about 2 tablespoons of the pancake batter into the pan, forming 8 small circular pancakes. You may need to cook them in two batches to avoid overcrowding. Cook until golden brown on the bottom, then flip and cook for another 60-90 seconds until fully cooked.
- Cook the eggs: Whisk an egg in a small bowl. Heat a pan over medium-low heat and spray with cooking spray. Pour the egg into the pan, swirling to spread it evenly. When the edges begin to set (within 10-15 seconds), use a rubber spatula to fold one half of the egg toward the center, then fold the other half over the top to form a rectangle. Next, fold one end of the rectangle into the center, then the other end to form a square-shaped folded egg. Repeat this process for all 4 eggs. To save time, you can cook two eggs simultaneously and cut them in half.
