Steak Bites

  • 1 lb baby potatoes, halved or quartered
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste

Garnish

Instructions

  1. Prepare Potatoes: In a large skillet over medium heat, add 1 tablespoon of butter and 1 tablespoon of olive oil. Add the halved or quartered baby potatoes. Season with salt, pepper, dried rosemary, and dried thyme. Cook the potatoes, stirring occasionally, for 10 to 12 minutes or until they are fork-tender and golden brown. Remove the potatoes from the skillet and set aside.
  2. Sear Steak Bites: In the same skillet, add 1 tablespoon of butter. Place the sirloin steak bites in a single layer, ensuring not to overcrowd the pan. Sear the steak for 2 to 3 minutes per side, or until browned and cooked to your preferred level of doneness. Remove the steak bites from the skillet and set aside.
  3. Make Garlic Butter: Reduce the heat to low. Add the remaining 1 tablespoon of butter along with the minced garlic to the skillet. Sauté the garlic for about 1 minute until fragrant, being careful not to burn it.
  4. Combine & Serve: Return the cooked steak bites and potatoes to the skillet. Toss them thoroughly in the garlic butter sauce to coat evenly. Garnish with freshly chopped parsley and serve immediately while warm.
