Ingredients

Scale

Roll Ups

  • 6 medium flour tortillas
  • 1214 oz thinly sliced roast beef
  • 6 slices provolone or Swiss cheese
  • 2 tbsp melted butter
  • 1 tsp garlic powder

Additional Fillings

  • ½ cup caramelized onions
  • 68 thin jalapeño slices
  • ¼ cup shredded cheddar cheese

Au Jus Sauce

  • 1 packet au jus mix or 1½ cups beef broth

Equipment

  • Baking sheet
  • Parchment paper
  • Small saucepan

Instructions

  1. Prep the Oven and Pan: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil to ensure easy cleanup after baking.
  2. Assemble the Roll Ups: Lay out the tortillas on a clean surface. Place a slice of roast beef and a slice of cheese on each tortilla. Optionally add caramelized onions, jalapeño slices, and shredded cheddar cheese for extra flavor. Roll each tortilla tightly like a burrito, but do not fold the ends. Position the rolled tortillas seam-side down on the baking sheet to keep them from unrolling during baking.
  3. Brush with Butter: Melt the butter and mix in the garlic powder and a pinch of salt. Brush this garlic butter mixture over the tops of each roll up to enhance browning and flavor.
  4. Bake Until Golden: Place the baking sheet in the preheated oven and bake the roll ups for 10–12 minutes. Bake until the cheese inside melts and the tortillas begin to brown. Keep an eye on them towards the end to avoid over-crisping.
  5. Make the Au Jus Sauce: While the roll ups bake, prepare the au jus sauce by combining the au jus seasoning packet with 2 cups of water or beef broth in a small saucepan. Bring the mixture to a simmer over medium heat, stirring until smooth and slightly thickened.
  6. Serve Warm: Once baked, slice each roll up into halves or thirds to make dipping easier. Serve the sliced roll ups warm alongside small bowls of the au jus sauce for dipping.

Notes

  • You can substitute Swiss cheese with provolone or vice versa depending on your taste preference.
  • Adding caramelized onions, jalapeños, and extra cheddar cheese inside the roll ups adds layers of flavor and texture.
  • If you don’t have an au jus packet, beef broth can be used as a flavorful alternative.
  • Brushing with garlic butter before baking helps develop a beautiful golden crust on the tortillas.
  • Serve immediately for the best texture and flavor as the tortillas can become soggy if left too long.
