  • 1 large egg
  • 1 3/4 cups (435 ml) milk (any type or fat %)
  • 1 teaspoon vanilla extract or essence

For Cooking:

  • 4 teaspoons butter, for cooking

Instructions

  1. Dry Ingredients: In a large bowl, whisk together flour, baking powder, sugar, and salt.
  2. Wet Ingredients: In another bowl, beat the egg, then add milk and vanilla extract; mix well.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined—batter should be slightly lumpy but without dry spots. Avoid overmixing.
  4. Heat a non-stick skillet or griddle over medium heat and melt 1 teaspoon of butter.
  5. Pour about 1/4 cup batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2–3 minutes.
  6. Flip carefully and cook the other side until golden brown, about 1–2 minutes more.
  7. Repeat with remaining batter, adding more butter as needed.
  8. Serve warm with syrup, fresh fruit, or toppings of choice.
